so, when i first saw this recipe, the first thing that came to mind was the zucchini bread my mother makes during the holiday season. Now, on a regular, you couldn’t pay me to eat eat zucchini, but, her delicious sweet bread gives an entire new outlook on zucchini. Now, put it in a cupcake form and put some chocolate in the batter with a pecan middle, you have something delightful. My bigmama always ate it vanilla ice cream. Now, everybody loves frosting on a cupcake… how about a not so sweet light vanilla bean buttercream? how’d that taste?
A twist on Rocky Road ice cream is put into a BEAUTIFUL cupcake. With marshmellows, chocolate, and almonds all paired with a delicious brownie, this cupcake looks like it would be a hit.
